【Institute for Advanced Biosciences】 Key Aroma Thiols Identified for the First Time in “Tsuruoka Koshu 2023,” Winner of Top Honors at IWC 2025 — Analysis Conducted by Keio IAB

The IAB, Keio University, in collaboration with industry, academia, and government partners—including Elsan Winery Matsugaoka Co., Ltd. and the Shonai Testing Facility of the Yamagata Research Institute of Technology—has been conducting joint research supported by the Yamagata Bio Cluster Formation Promotion Program.

In this study, thiol compounds, known to play a key role in aroma, were identified for the first time in the wine “Tsuruoka Koshu 2023,” for which IAB conducted component analysis.

The wine was also awarded a Gold Medal (top honor) at the International Wine Challenge (IWC) 2025, raising expectations for further improvements in quality.
